Turkey Sushi
This is a kid-friendly recipe that is so cool! Kids will never guess this is healthy. This recipe is perfect for the on-the-go grade schooler, or teens.
 
Ingredients:

• 1/4 Cup Cooked whole-wheat couscous
• 1 Teaspoon Light Mayonaise
• 2 Slices of low-fat Turkey lunchmeat
• 1/4 Cup carrots, grated
• 1/4 Cup celery, sliced
• 1/4 Cup red bell pepper, diced

 

Preparation:

Mix couscous with mayonaise to bind the grains together. Spread the mixture on two slices of turkey. Lay grated carrots, celery, and red bell pepper between the two slices. Roll up and cut crosswise into 1-inch pieces. Serve with string cheese and fresh fruit. Makes 1-serving.
